The Italian restaurant Il Castello comes to us through Roberto Espinoza Chávez who brings his 10-year restaurateurial experience in the United States where he opened several restaurants. He arrived in San Miguel de Allende about two years ago to open Castello. Since this is an Italian restaurant, it naturally has many types of pastas and wood-oven baked pizzas; but they also have salads, various entrees, and subs. Two diner’s favorites are the chicken parmesan—breaded chicken, marinara sauce and grated cheese; and the lasagna. Castello makes their own sauces and breads, all prepared with the freshest products of the highest quality.
There are various specialty pasta dishes featured such as the eggplant rollatini prepared with spinach, ricotta, mozzarella, and spaghetti. There is also the chicken a la diabla with a spicy marinated sauce, fresh garlic, and olive oil, served with rigatoni. The tibolli is a shrimp dish with ham, mushrooms, and a pink vodka sauce on a bed of fettuccine. The pizza that everyone is excited about is the suprema which has chorizo, pepperoni, red onion, mushrooms, and bell peppers. There are many other varieties as well such as vegetarian, meat, barbecue chicken, Hawaiian, margherita, and three cheese pizzas.
