Kiuma offers signature cuisine with organic and local products from San Miguel de Allende and its surroundings. In the future they hope to grow their own garden in order to have the raw material at their fingertips and thus provide a more natural and healthy menu.
The restaurant has been open for two years and its menu consists entirely of Mexican cuisine, with a touch of neo-cuisine coupled with organic and natural ingredients. For breakfast there are the typical dishes such as eggs made to order, huevos rancheros, casserole eggs, pesto omelet, Mexican omelet, waffles, fresh fruit and juices of the day. They also offer baked sweets made on the premises.
For lunch you can choose dishes such as enchiladas mineras, stuffed pumpkin flower, red aguachile, beet salads with lavender vinaigrette, strawberry salad with crunchy walnut and blue cheese, chicken stuffed with Manchego cheese and Serrano ham with tatemado (charred) tomato sauce and chipotle accompanied with beet puree. They will soon have a grill for different cuts of beef and an oven for a variety of pizzas, exclusive to the Kiuma restaurant. Each dish here offers something quite unique. One of my favorites is the beef fillet with potato crust and a mezcal honey sauce.
There are also many beverages to choose from. Many are made with traditional ingredients such as xoconostle, cactus pear, tamarind, and others, all from San Miguel de Allende and surroundings. Kiuma aims to be totally sensory in the hopes that you will capture moments and feelings through both the sight and the taste of each dish. The restaurant is located at Hilo Rojo Hotel, high above the city, and the views from the top are amazing. In their meals they attempt to go beyond the classic by creating one-of-a-kind dishes that appeal to all your senses.
